Black Beans: Molletes – Mexican Refried Bean Open Sandwich

If you haven’t made that big pot of black beans, you’ll want to soon. They are the base for the refried beans in molletes (a Mexican antojito/snack) and other recipes coming up.

Nearly two decades ago I made my first trip to Mexico – I lived with a family in Cuernavaca and traveled around central and southern Mexico. Some of the places I visited were  D.F. (Districto Federal aka Mexico City), Puerto Escondido, Oaxaca, Puebla, Taxco and so many pueblitos I can’t remember their names.

This trip has a very special place in my heart since it was the first time I packed my bags to venture alone in a new country. But, more significant was that it was my first trip to my Motherland and an amazing personal journey – with much familiarity and even more that was new.

I have vivid food memories from this first extended stay, like the tacos de flor de callabaza I bought trail-side after finishing a hike near some steep ruins where the locals frequented; the just-caught, fried fish served with nopales on a remote beach near Puerto Escondido; the mole in Puebla; and the amazing mercado in Oaxaca. Also on this list are molletes (pronounced mo -YEY -tes). Refried black beans and melted cheese on crusty bread, topped with fresh pico de gallo.

This open sandwich quickly became a favorite. At the time, I was on a budget and molletes were a great anytime meal that was both good and cheap. I think I paid the equivalent of 50 cents or a dollar for two halfs when eating out. Two pieces is a full meal for this chica.

Nearly every time I’ve had them in Mexico, they’ve been served with black beans, although pinto beans are also used. Most of my travels so far have been to central and southern Mexico, and the Yucatan – places where black beans are preferred

To make molletes, you can use my Cuban black bean recipe (no, it’s not sacrilege) or your favorite home-made black or pinto beans. You can also use canned beans; but, if you do, buy the beans whole and make your own refried beans, they’ll taste much better.

Molletes are not fancy food but you’ll be glad to have this recipe in your arsenal of quick to make meals for breakfast, lunch, dinner or snacks. As I write this, I’m thinking one of these topped with bacon would be a Mexican BLT.

Coconut Milk: Vietnamese Waffles – Banh Kep La Dua

Sunday is my day to chill out. It’s a leisurely day where I let the pace be what it maywhether it’s sleeping in, reading curled up on the sofa or taking my time folding laundry. Some Sundays I am eager to cook up a feast, never mind that it takes 1 or 4 hours. Other times, laziness sneaks in and I want someone else to break out their pots and pans.

Frequently that someone is New Saigon, my favorite Vietnamese restaurant in Denver.

One of the perks of going there on the weekend is that they now serve waffles. These are not the kind of waffles you’d drench in butter and syrup. They are Vietnamese waffles, banh kep la dua – a sweet treat that is served up by Vietnamese homecooks and street food vendors. It’s eaten naked, like a pastry, and is the perfect dessert after my usual meal of spicy lemongrass chicken and vegetables.

Banh kep la dua are made with coconut milk and pandan. The coconut milk is why the recipe is featured with this series and the reason these waffles are so special.

Pandan is a tropical plant frequently used in Southeast Asian cookery and makes its way into many desserts. You can tell by the signature bright green hue (which is a combination of natural color and added food coloring). Pandan tastes and smells sweet and floral.

Last Sunday was a lazy one. My husband and I had lunch at New Saigon. This time, however, I skipped my regular waffle for the first time in months. Because of you, I’ve been tinkering with recipes for several weeks and am waffled out. I’ve created a recipe for Vietnamese waffles that’s crispy and light like the version I’ve come accustomed to on Sunday afternoons.

Re the recipe:  Nearly all the other Vietnamese waffle recipes online use only AP flour (all-purpose) and attempt to get that crispy, light texture by using cornstarch and baking powder or cream of tartar.  I found some references to Vietnamese cooks using only rice flour, but that made waffles that were too light and airy. I prefer a combination of the two for a lighter but more structured waffle.

How to eat a Vietnamese Waffle?

The first time I ate banh kep la dua, it was served hot on a plate. I was sharing it with freinds at the table and wasn’t sure how I was going to split it with my chopsticks from lunch.  The waitress brought us one fork and, because I still looked perplexed, she quickly quartered the waffle and gave everyone at the table a piece in-hand.

It was and still is the best naked waffle whether you eat it with . . . a fork, fingers or chopsticks.

Cranberry: Fresh Cranberry Chocolate Scones

This time of year I take advantage of the access to fresh cranberries by subbing them for the dried or jellied versions when possible. This recipe for fresh cranberry chocolate scones is an adaptation of my standard scone recipe that I usually use with dried fruit – currants, golden raisins, cherries, or dried cranberries.

Scones originate with the culinary fare of Scotland, Ireland and England and are linked to the Welsh tradition of cooking small yeast cakes on bake stones and griddles.

Although scones are not a part of the usual Thanksgiving fare, they certainly are lovely with a cup of tea or coffee any time of day.

Did I mention that traditionally scones are not laden with lots of sugar? For American taste buds, think more about the sweetness of a biscuit rather than those sweet, frosting covered scones found at the market and coffee shops.

Originally, scones were made with oats, shaped into a large round that was cut into wedges. More often these days, classic scones are made with flour and use currants or raisins and are eaten plain or smeared with clotted cream or preserves.

This version capitalizes on fresh, tart cranberries and also calls for chocolate – a combo I adore. I eat them plain – no extra cream, preserves or butter.

One other fact I must mention, scones are best when freshly baked. The recipe below makes a dozen or 14 wedges. If you want to freeze some to bake later, see the instructions about flash-freezing below.

Tidbits on Cranberries:

  1. Cranberries are closely related to blueberries, lingonberries and cowberries.
  2. Cranberries are tested for firmness by their bounce, which explains why they are also referred to as “bounceberries.” Those that do not bounce are discarded.
  3. Cranberries stay fresh longer than other berries because they have a waxy skin.

Pumpkin Seeds: Mexican Peanut Pumpkin Seed Brittle – Palanquetas

If you checked out my Mexican Pumpkin Seed Pesto, you know that pumpkin seeds have been used in Mexican cookery since pre-Columbian times. Pumpkins are believed to have originated in Central America about 5500 B.C.E.

Pumpkin seeds are used in many Mexican dishes, typically to make thick, rich sauces. However, they are also frequently eaten there as a snack – roasted in oil or used to make palanquetas or pepitorias, a candy brittle.

Know that generally, I turn up my nose at regular peanut brittle – something that started when I was a teenager wearing braces. So, this Mexican brittle is exceptional.  It’s packed with good for you ingredients and has less of the sugary brittle.

Palanquetas (brittle with nuts) or pepitorias (brittle with seeds) are usually flat, round disks, but they are sometimes also packaged as rectangular blocks. Candy makers load them with a single ingredient like pepitas (pumpkin seeds), cacahuates (peanuts) or sesame seeds (ajonjoli) – or, they make them with this trio of  traditional ingredients, sometimes also adding popped amaranth .

With this recipe you’ll be able to make your own at home. It’s easy.  If you’re wary about eating “brittle,” you can boil the honey for less time and your final palanquetas will be more chewy like those fancy, expensive granola bars you find at the natural/health food stores.

This weekend I made two batches – I took one chewy version to a friends’ house and they were an instant hit. The other, I made more brittle-like. Either version will make a great protein snack fit for your outdoor, air and car travels. These also make great goodie gifts during the holidays. To make them more novel, add some ground chile and a squeeze of lime to your honey before you boil.

My version uses honey as the brittle base rather than sugar or sugar and corn syrup that most recipes call for. It’s a hearty snack that’s not overly sweet.

Tidbits on Pumpkin Seeds:

  1. Pumpkin seeds are more rich in iron than any other seed and are an excellent source of zinc, an essential mineral that helps the immune system.
  2. Buy hulled green (untoasted) pumpkin seeds at health-food stores or Mexican/Latin American markets where there is frequent turnover. Untoasted pumpkin seeds are less perishable. Store them in the freezer.

Purslane: Raw Purslane Weed Salad

Call it a weed if you want. Purslane is still good eating.

Every summer growing up, my family planted a backyard garden with tomatoes, calabacitas (zucchini), chiles, cilantro, onions and a few other standards found in most Mexican family gardens. Yet, part of the bounty we enjoyed was something we didn’t plant . . .  weeds.

We would chow down on verdolagas. You might know the weed as “purslane.”

Purslane is a long, red-stemmed succulent with fleshy oval flowers.  It grows all over the world and is eaten in many cultures – in Egypt and Sudan it is used as a medicine and as a vegetable, in France it is served with fish, in Holland it is used in winter salads, and in Mexico, it is frequently eaten with pork.

Despite this, it has a bad rap with most gardeners, who consider it an invasive weed.

Purslane is also known by some unattractive names like pigweed, Little Hogweed and pussley. Not too enticing, eh? After reading this post and its nutritional value (see Tidbits below), I hope you’ll be persuaded to try the little succulent. Know that some folks consider it a superfood.

Purslane has a mild flavor and is slightly lemony. It reminds me of nopales (cactus), without as much mucilage.

This summer as purslane grows in my garden and in the cracks of my sidewalk, I’ve allowed some areas to grow. I prefer to pick it when the stems are about 5 inches in length – the longer the stems, the tangier. On the occasions when it is longer, I discard the thick stems or at least make sure they are cut into small bite size pieces.

The recipe below is for a quick, raw salad I’ve been making this summer. It’s been a hit at several potlucks including my community garden workday. Fellow gardeners were thrilled to find a use for the “edible weed” pervading their gardens.

Hip me up to your favorite uses for purslane.

Tidbits on Purslane:

  1. Purslane has been a go to food during hot weather since before Christ. It is believed to sooth the head and cool the body.
  2. Pigs, apparently, go mad for purslane. I suspect the reason for calling it “pigweed.”
  3. Nutrition:  it’s one of the best vegetable sources of omega-3 fatty acids and some suggest it should be considered a super food. “It is a good source of Thiamin, Niacin, Vitamin B6 and Folate, and a very good source of Vitamin A, Vitamin C, Riboflavin, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.”

Parsley: Sun-dried Tomato Quinoa Tabbouleh

Parsley is one of my favorite herbs.

Growing up, however, the only time I remember parsley on my plate was as a green garnish that I pushed to the side. Then, years ago when I began eating Middle Eastern foods like tabbouleh, the herb found a regular place in my heart and garden.

I grow both curly and flat parsley and prefer the curly version for tabbouleh.

Parsley’s exact origin is uncertain but is believed to have been in the Mediterranean region, from Spain to Greece and its use has spread throughout the world for both culinary and medicinal uses.

There is also much folk lore surrounding its use – one particular belief was that the herb would only flourish in gardens where a strong woman presides over the household.  Snap!

The herb is a key ingredient in several cultures including those from the Middle East and North Africa. It’s essential in the refreshing salad tabbouleh (also spelled tabouleh, tabbouli, tabboule) that has its roots in Lebanon and Syria.

Traditionally the dish has parsley, mint, tomatoes, bulgar wheat, lemon juice, olive oil and seasonings such as allspice and cinnamon. It’s often eaten by scooping it up in lettuce leaves. In the Middle East, it is more of a green salad than a grain salad.

Over the last several decades the salad has grown in global appeal, which has led to a variety of interpretations – such as in North Africa where the cracked wheat is substituted with couscous – and, here in my Colorado kitchen, where this recipe uses quinoa. When I don’t have garden fresh tomatoes, as in now, I use sun-dried. My tomato plants are growing at a snails pace, or so it seems. I created this recipe for a local magazine spread and for those eating gluten free.

Tabbouleh makes a great snack, side dish or a complete meal with hummus or falafel.

Tidbits on Parsley:

  1. There are three common varieties of parsley: curly, flat (Italian) and Hamburg. Parsley is rich in vitamin C and iron.
  2. Parsley is related to carrots, parsnips, and celery.
  3. Parsley has an honored place in folk lore and history:  parsley was used in Greek and Roman ceremonies; it was sprinkled on corpses to abate stench, Greek athletes were crowned with parsley and during the Middle Ages it was credited with lethal powers – pulling parsley root from the earth while calling out an adversary’s name could cause death. It was also believed to promote menstruation, facilitate childbirth, and increase female libido.

Cornmeal: How to Make Home-made Polenta Chub Rolls

In this post, a “chub” is not me in my bikini (no need to see those pics). Nor is it a fish. It refers to the tube, roll or log of ready-made polenta sitting on store shelves and maybe even in your cupboard?

Most people like chubs for their convenience – slice it and reheat. But, the taste of that pre-packaged polenta is closer to a log than what you get when you make it from scratch.

If you’re a chub buyer, you may also be purchasing the ready-made version because you’ve heard that polenta is difficult to prepare. It’s not.

Polenta is simply cornmeal simmered in liquid and stirred. (Read my post about grits v. polenta.) And, to bust a big myth, it does NOT require constant stirring; just a watchful eye and some stirring. It can be prepared simply, mixed with butter and cheese, or made a delicacy with fancy ingredients.

It is commonly eaten in two forms:  soft and creamy or hardened and shaped for baking, grilling or frying. In this post, we’re doing the latter. The ingredients are identical in both except that the polenta cooks longer so it thickens when it sets.

Making home-made chubs is easy – simmer polenta, add flavors, let it cool and set it in cyclinder container. That’s it.

Also note that you can freeze polenta – slice in individual portions, wrap and freeze. Take out what you need, when you need and reheat.

Chubs run about $4 for an 18 oz. roll. You can buy a whole bag of polenta for that much and it’ll make at least six (tastier) chubs. By making your chub, you can create entirely new flavors: green chile and cheese, sundried tomato and Parmesan (recipe below), or asiago and basil. Make sure to finely chop ingredients that don’t melt. I’ve included detailed instructions only as a guide as to the process but experimentation is always welcome.

Tidbits on Polenta:

  1. Before corn made its way to the Old World, Europeans ate porridges similar to polenta that were made of millet, chesnut flour, barley and buckwheat. They were eaten much like polenta, seasoned with milk, cheese and meat.
  2. When corn first arrived in Europe, it was grown for animal feed. But, between the seventeenth and eighteenth centuries corn became a staple to peasants and mountain northern Italians. Southern Italians disparagingly refer to their northern countrymen as “polenta eaters.”
  3. Around the world, many cultures that had adopted corn as a primary staple in their diet became afflicted with “pellagra” a niacin vitamin deficiency. They did not follow Indigenous culinary tradition by preparing corn with alkaline water (nixtamal), which increases niacin and lysine. In northern Italy, where many subsided solely on polenta, pellagra became wide-spread. Thought to be associated with corn, Italians at one point forbid eating polenta.

Popcorn: Rosemary-Garlic Popcorn – Snack or Croutons

The modern American palate considers popcorn snack food. However, the other night I watched a flick where the leading lady fed her family popcorn for breakfast. In the movie, she was broke. Nonetheless, it was way out of the box for me. Popcorn cereal?

It may seem kitschy now, but decades ago, popcorn cereal was avant-garde.

According to the history of popcorn cookery, popcorn was on the verge of becoming a staple ingredient in the early 1900s – commonly eaten at every meal. The upper and middle-class are credited with developing this broader recipe repertoire, which was later adopted by the less affluent and farmers.

Besides cereal (cold and hot), popcorn was used to make puddings, bread, popcorn balls, and stuffing.

Popcorn was also used as a replacement for croutons and crackers. The crispy texture was a perfect garnish for soup and salads.

Like most of you, I fall in line with the majority of people who snack on popcorn – usually just salted and buttered. But, with just a little more effort I’ve created an herbed popcorn that can be eaten as regular snack food or as a topper for soup and salad.

The recipe below for rosemary-garlic popcorn is a lovely addition to a hot bowl of tomato soup. Add the popcorn to your dish just before eating, especially with soups.

The recipe is flexible – your favorite herbs and seasoning could be substituted. How about garlic and chive, basil and sun-dried tomato, or chile and lime? At your local spice store there is a plethora of seasoning mixes that could be used and some include powdered cheese – which makes for even tastier popcorn croutons.

Tidbits on Popcorn:

  1. Popcorn consumption rose in the United States after World War II, when grains were sent to Europe.
  2. The precursor to today’s microwave popcorn evolved from popping the entire cob with kernels in an early model of the  “microwave oven” around 1945.
  3. Popped popcorn is a very profitable business product. It is bought by weight and sold by volume. The aroma of freshly popped popcorn significantly induces sales at movie theatres. Therefore, they regularly pop it.

Popcorn Basics: How to Make Great Popcorn

Normally, I like food with exotic flavors and sauces. But, popcorn, I like simple – popped fresh with a dash of salt and, on occasion, lightly buttered.

After talking with folks here and there about how they eat p-corn, it seems I’m not alone. Most adults, or at least the ones I spoke with, prefer to nosh on popcorn that’s simply salted and buttered. It’s most often eaten while watching flicks.

So this post is about the basics. No fancy toppings or long ingredient list. (My shortest recipe to date.)  Just some guidance on making great popcorn at home.

I do not claim to be an expert. But, we know a bit about popcorn in our house since we make it two to three times per week. Roughly speaking, I (yes, just me) eat about 100 quarts of popped popcorn a year. Note: the average American generally consumes about 44 quarts of per year.

Let me know how you like your popcorn? Or, if you employ any interesting techniques. Before we get to popping, here’s some helpful info:

Why does popcorn pop?

The outer shell of popcorn kernels (the pericarp) is tougher than regular corn and can withstand greater pressure. This special maize “pops” when heated because the moisture inside the kernel swells as it cooks, rapidly expanding to a point where the shell cannot contain the explosion. It bursts, turning it inside out.

Butterfly v. Mushroom?

These terms refer to the “flake” shape. Whether it’s marked “butterfly” or not, it’s the kind found in most grocery stores. Butterfly popcorn is irregular in shape with protruding “wings.”  The mushroom variety is ball-shaped with less distinct wings. The main difference comes down to texture. Popped butterfly popcorn is light and fluffy, with wings that are delicate. Mushroom popcorn is generally preferred for candied and coated popcorn because it is denser and less delicate.

Which type:  yellow, white, colored?

Regardless of the color you buy, it’ll pop up some color of white. If you’re shopping for popcorn at a regular grocery store and they have white and yellow kernels, choose white. White popcorn pops lighter and crisper. The yellow has a tougher hull, which makes it much chewier. I also find it sticks in my teeth.

If you have access to other varieties, definitely give them a try. There are several companies selling heirloom popcorn online and at local farmers’ markets. In the Denver area, there’s Boulder Popcorn.

Boulder Popcorn sells three heirloom varieties:  red, blue-grey and yellow. The kernels are smaller than what you find in the store and are much lighter and crisp when popped. They carry Ryder’s Red, Kailey’s Kernels (hulless), and Cambria’s Cream (hulless). Note, the hulless varieties still have hulls but they are less distinct, easier on the teeth and to digest. Their popcorn is natural and non-Genetically Modified. This was so good, we ate it plain – no salt or butter. Each variety is unique: the red pops large and fluffy; the blue has a medium, bright white wings with a slight nuttiness; and the cream is smooth and creamy.

Addendum 10/17/10:  Andrew Knowlton, the BA Foodist (Bon Appetit) is also a fan of Boulder Popcorn. In the October 2010 issue and on the BA Foodist blog he says Boulder Popcorn is his current favorite brand of popcorn.

What kind of popper?

There’s a lot on the market from hot air poppers to fancy/gimmicky contraptions. However, a no fail method and my preferred equipment is a heavy pot with a lid.

What if I have a lot of duds?

It’s likely the moisture content is low. Don’t throw it out, you can fix it. Put your kernels in a glass jar with about a tablespoon of water. Cover, shake and refrigerate for a day or two. The moisture will absorb into the popcorn and should pop up fluffy. Just make sure the kernels are dry first. Researchers say the moisture content of popcorn kernels should be between 11 to 14 percent.

What kind of fat or oil?

I’ve popped it in olive oil, coconut oil, butter and bacon grease. But, we still prefer canola oil.

What about leftovers?

Heat oven to 200 degrees and reheat on a cookie sheet for about 20 minutes. However, I think the best popcorn is fresh popped.
